With the shutdown we are not currently making any spirits for drinking but that doesn't mean I cant taste my way through some barrels we already have filled. I found a couple exceptional barrels along the way and decided to bottle a few of them.
Pear Brandy aged 20 months and bottled at barrel strength ( 107.7 proof.) Very limited supply.
Congac like nose, gentle pear and light caramel notes on the tongue. The flavors together give the impression of sweetness but there is absolutely no sweetener in this bottle. One of my most favorite things I have ever made.
