With the shutdown we are not currently making any spirits for drinking but that doesn't mean I cant taste my way through some barrels we already have filled. I found a couple exceptional barrels along the way and decided to bottle a few of them.
Ouzo, barrel rested for 13 months and bottled at barrel strength ( 108 proof.) Limited supply.
Still has plenty of anise flavor to it but it is nicely complimented by toasty notes provided from its time in the barrel.
